dave's got the mower up on blocks. just another night in the neer household...
had a good workout at home tonight - ran 6 min/walked 14 min, then followed that up w/ 3 sets of 15 bicep curls, rows, and 2 sets of stability ball crunches, reverse crunches, sb push ups, followed by 1 30 sec plank and 15 squats (didn't do so many of these as my legs are still sore from sat)
we also had a good dinner - a weight watchers recipe off their website. very delicious. highly recommend. (i modified it slightly cuz i didn't have all the ingredients, and i served it with veggies and some pasta)
here's the recipe - let me know if any of you try it :) dave even said i could add it to "the big four" (things i fix most often...)
Chicken Parmigiana
serves 4
5 WW points per serving
prep time 20 min
cooking time 30 min
Ingredients:
2 sprays cooking spray
1 cup instant oatmeal
2 tsp dried orgegano
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper, freshly ground
4 4 oz boneless, skinless chicken breasts
1 cup spaghetti sauce
1 can diced tomatoes
1 cup shredded fat free mozz cheese
Instructions:
1. preheat oven to 400 deg. coat baking sheet with cooking spray
2. combine oats, spices (only half of oregano), salt & pepper in a shallow dish. add chicken to oat mixture and coat both sides, pressing mixture onto chicken w/ hands. place chicken on coated baking sheet, bake 20 mins
3. in medium saucepan, combine spaghetti sauce and diced tomatoes and second half of oregano. set pan on medium heat, bring to simmer. simmer 10 mins, remove from heat.
4. remove chicken from over and top each chicken breast with 1/4 cup sauce and 1/4 cup cheese. return pan to oven and bake until cheese is melted and golden, about 7 to 10 mins more. yields 1 piece per serving.
